Avocado Vinaigrette

As part of the Healthy Living Plan we’ve been following with great results, there is a call for lots of healthy organic vegetables and for me this means a lot of salads.   And, the vinegar of choice for the plan is Braggs Apple Cider Vinegar - Bragg’s is my very favourite!   It was even recommended on Oprah!

So, without further delay – here is one recipe that can be used on any salad that you like – I always include some nuts – tonight I had pumpkin seeds but my favourite is walnuts.

Avocado Vinaigrette

In a 2 cup measuring cup (I like the one that has the Pyrex one with the red lid so that I can use it to store leftovers later) or in a Magic Bullet, put the following ingredients:

  • 1 peeled and pitted avocado
  • 2 tbsp apple cider vinegar
  • 4 tbsp extra virgin olive oil
  • 3 tbsp water
  • 1 tbsp lemon juice
  • salt and pepper to taste

and blend all ingredients together, using a hand blender (or your magic bullet).  

I made this Thursday and had it again on Sunday and it was still great!

Note:  Organic apple cider vinegar is good for you and good for your skin too!  Drink it twice a day – 2 tbsp of apple cider vinegar with 8 oz of water.  Some people drink it straight…let me know what you think!
