Greek Ribs

Version 1

2 racks of ribs – cut into serving sized pieces, sprinkle with Montreal steak spice and bake at 400 degrees for 30 minutes.

Let cool a bit and then put into a heavy duty ziploc bag with the following marinade:

  • 1/3 cup olive oil
  • 1/2 cup lemon juice
  • 2 tbsp oregano
  • garlic

Marinate for at least an hour and then bake at 375 degrees for 1/2 hour.

Version 2 (Quicker)

In a large pot, cover spareribs with water and bring to a boil.  Reduce heat and simmer for 20 minutes.  Drain ribs and place on a broiler pan.  Squeeze lemon juice liberally over ribs and then sprinkle with seasoning salt, garlic salt and oregano to your heart’s content.  Bake at 350 degrees for 30 to 40 minutes.   Serve with rice.
