1/2 regular cucumber (not English), peeled and diced
1 medium avacado, skin removed, seeded, diced
1 lime, cut in half and juiced
1 tsp EVOO
2 tbsp red onion, minced
1/4 tsp sea salt
1 tbsp cilantro leaves, chopped
Place cucumber and avacado in a medium bowl and cover with juice from the lime. Add oil, onion, salt and cilantro and stir gently. Serve immediately.
